List of ingredients
Ingredients for two sandwiches
- 6 slices of Nordic Loaf 330 g
- 1 aubergine
- 1 courgette
- 1 red pepper
- 1 yellow pepper
- 150 g firm tofu
- 80 g crumbled feta cheese
- 4 tablespoons of hummus
- 4 dried tomatoes
- ½ cucumber
- A few young shoots (rocket, lamb's lettuce or mixed salad)
- Olive oil
- Soy sauce
- Salt, pepper, oregano
Preparation steps
Method
- Chop the aubergine, courgette and peppers.
- Brush with olive oil, add salt and pepper, then grill on each side. Deglaze at the end of cooking.
- Slice the tofu, season it and grill on each side.
- Add a few drops of soy sauce at the end of cooking.
- Grill the slices of bread in the oven.
Making the sandwich
- Spread hummus on the first slice of bread, then add a layer of grilled vegetables.
- Add a second slice of bread, spread a thin layer of hummus and add the dried tomatoes.
- Then add the tofu, the crumbled feta cheese, the finelysliced cucumber and the young shoots.
- Close the sandwich with the final slice of bread.
- Drizzle with olive oil.
- Sprinkle with oregano before serving
